Diane’s Foods of McMinnville, founded in 1965 to produce Lefsa for the delicatessen trade, has expanded to produce tortillas. Using the same equipment as the Scandinavian, potato based pancake, the facility produces tortillas year-round to meet the growing popularity of Mexican food. The expansion was necessitated by the seasonality of Lefsa consumption, popular mostly during the holiday season.
